Nyetimber created this demi-sec blanc de blancs, named after the winemaker Cherie Spriggs, to complement delicate desserts, but like many sweeter styles, it can also work well as a pairing for gently spiced Asian cuisine. It's a multi-vintage wine with 38g/L residual sugar, and it has spent five years ageing on its lees in bottle. It feels luxurious to drink, ripe and honeyed with red apple sweetness and notes of toffee.
