Domaine Sébastien Magnien, Les Aigrots, Beaune 1er Cru Blanc 2012

A classic Chardonnay from Burgundy in a very elegant and rather delicate, mid-body style as Aigrots always tend to offer. This young winemaker – but already a very talented producer based in Meursault – manages the barrel ageing process very well. This wine shows fine oaky and toasty notes, which would match the nutty and mushroom notes of the dish. It’s never heavy and buttery but it has rather enough freshness and lift to pair with the spring onions and parmesan. A lovely traditional match.

Domaine Louis Cheze, Ro-Rée, Saint-Joseph Blanc 2014

An original food and wine pairing, the wine has more depth and power but is youthful in style, the fruit and floral youthfulness would be welcome with the pesto and pasta. This blend (60% Marsanne and 40% Roussannne – vines of 30 years old planted on granite soil) is intense, charming and already very enjoyable.

A typical Piedmont grape variety that offers lots of finesse and a soft texture with the tannins very well integrated. It’s freshness will match well with the salty parmesan taste and bring balance between both dish and wine. Fine red fruits aromas as well as some herbal and earthy notes offer a complex and great bouquet which should match very well with the rocket and cèpes flavours in this dish.

About Aristide Spies MS

Aristide Spies MS discovered his passion for wine during a family holiday in the Périgord and immediately enrolled in a series of wine tasting and cookery courses on returning home to Belgium. Following secondary studies, he spent a year as an exchange student in Australia, before beginning his wine career at the one Michelin star restaurant Les Forges du Pont d’Oye as assistant to Pascal Carré, named Best Sommelier of Belgium 1992, 1996 and 1997. In 2007, Spies won this same title for himself, also winning the Club Gastronomique Prosper Montagné’s Premier Sommelier de Belgique. Spies then went on to represent Belgium at the Best Sommelier of Europe competition in Sofia in 2008, where he reached the semi-finals, and at the World’s Best Sommelier 2013 competition in Tokyo, where he was a finalist. Spies has written and broadcasts about wine, and is a member of both the International Federation of Wine and Spirits Journalists and Writers (FIJEV) and the Jurade de Saint-Emilion. He currently runs La Cave des Sommeliers, a chain of wine shops in Belgium and Luxembourg, with his former mentor Pascal Carré.
