A violet-ruby hue in the glass with a nose of violets, lavender, thyme, red fruit, green pepper and spiced oak. On the palate, it flows well with a medium body, sharp freshness and gentle tannins. Following a cool, rainy summer, the 2016 vintage was one of the coldest in Mendoza's history. Faced with these conditions, the winery took a bold approach to Caro 2016 with a blend of 83% Cabernet Sauvignon and 17% Malbec aged for 18 months in oak barrels, 80% of them new. The oak plays a significant role in defining the structure.
