A great conversation piece, the fruit for this wine is picked very early - in the first two weeks of January (equivalent to early July in the northern hemisphere) - with the aim of making a Semillon that's approachable early rather than having to be left for a decade to develop first. And it was bottled and shipped in March, before Gundog had completed the rest of its harvest! 

Apart from the use of wild yeasts - unusual in Hunter Valley - a portion of the wine is fermented on the skins for six days in order to enhance body and texture. Consequently, a touch of residual sugar (8g/l) remains. This makes it a slightly off-dry style but it's very nicely balanced by the typical Semillon acidity. Its vibrant, light citrus and peach aromatics make it a highly versatile food wine, especially for anything with a some spicy warmth that might challenge other wines. And it also has a friendly alcohol level ideal for a warm summer's afternoon.
