The Pinot grapes, from eight different Dijon clones, were fermented with wild yeasts. 15% was whole-bunch fermented, while the rest was destemmed. It was then racked into oak barrels for maturation. The result is a lovely balance of tangy red fruits, sweet spice and fresh acidity. There's a touch of wild herb and liquorice on the long finish.
