A true solera wine with plenty of delicious nutty flor notes. Wave after wave of brine and meaty salted green olives waft from the glass. This is glorious stuff for a hot summer’s day. Preserved lemon zest, sea spray and even dried nori. Salt bush, dried lavender, citrus and a bone-dry finish envelop the crisp palate. Taut, lively and fun, it twists and turns unexpectedly as you taste, reminiscent of the strength and lilt of a flamenco dancer, capturing the scene with a mere flick of a wrist. A wine that makes so much sense in Australia's dry heat and beach-centric climate – I’m not sure why we don’t see more of these lighter Sherry styles.
