Sparkling Shiraz is a real 'Vegemite' style but this is worth a try. The base fizz is a blend of old-vine Shiraz from vintages back to 1996 kept in a solera then blended with the current vintage. Brambly and rich, it has sweet oak spice, plush tannins and brisk acidity. Serve chilled with roast meat, chocolate or cheese.
