A beautiful, rich nose opens, accompanied by a fine and persistent bead in the glass. A complex palate of roast red apples, chicken skin, bone broth umami, marzipan, autumn leaves, truffles, Meyer lemon, apricot flesh, flaky pastry and a pocketful of Eastern spice matches a heady perfume. There’s a salt-kissed white floral lift, too. At once opulent and regal, yet with a fineness and freshness. Detailed phenolics graze the palate, while pinpricks of acid keep this flowing through to an exceptionally long finish length. A triple threat of a wine: kicking high, striding long, and executing effortless pirouettes. Whole bunch pressed Chardonnay, with a wild ferment and full malo followed by 10 years on lees and 5g dosage, resulting in an exceptional wine.
