Ratcheting up Burgundy’s more savoury Bernard 95 clone produces a markedly textural palate, with sourdough notes and traces of nutty kernel to its muscular, compact white peach and apricot. Though powerful, intriguing dill and fennel top notes and Hill Road’s high natural acidity impart a lightness to its lingering finish. This spent 11 months in French oak hogsheads and barriques (44% new) on passive lees, and select barrels underwent 100% malolactic fermentation.
