Tannins cleave lightly, but distinctly on the palate, lending spice flavours and a hint of earth to the creamy strawberry and crunchier redcurrant fruit. Sweet crystallised ginger, Campari dried herbs, orange peel notes and fresh acidity amp up the food-friendliness. Sourced from Dunns Creek, 'up the hill' where a warm, dry January and February made for an early harvest. The blush pink hue and copper burnish reflect 19 days of skin contact, with pigeage during the fermentation.
