Toasty oak spice and umami funk on the nose here – think Parmesan crisps. Fruit is tucked away with preserved lemon, pith and chalkboard. The flavour is compacted and there’s some good acid tension and drive. There is plenty of winemaking on show here, and sadly it comes across louder than the fruit, which doesn’t linger as long as one would hope. All the same, this is a style that many will enjoy. Hand picked, whole-bunch pressed and wild fermented in 50% new French oak barriques for 10 months. Organic.
