From the southerly volcanic region of Malleco, this is made from equal parts Chardonnay and Pinot Noir, and combines sea-urchin salinity and umami depth with notes of baked apple, quince preserve, brioche, hazelnut praline and French pastries. Six months in barrel followed by more than five years on lees in bottle bring impressive complexity, while racy acidity keeps the finish long and electric. A wildly complex sparkling wine that speaks clearly of the south.
