For a wine of 100% Sauvignon Blanc, one obtains the expected verve, with a rather smooth and bright attack. I like the freshness of the citrus fruit, more grapefruit than lemon, and pleasing salinity on the finish. Cropped at a yield of 48hl/ha, this wine needs some breadth, which it will get from the eight months of barrel ageing in 500 litre barrels, foudres and jarres. Fine job!
