Rising star Arnaud Baillot farms several plots in Volnay; my favourite is his Volnay Mitans, which offers ripe plum and mulberry fruit with notes of peony, ginger and earth. The texture is supple and dense, with a subtle tannic line that makes its appearance on the lingering finish. The grapes are from a 0.3ha parcel; they are partially destemmed before a quick fermentation without sulfur and with little or no punching down. The result is an elegant and approachable modern style of Burgundy.
