This marvelously restrained wine is a favourite of proprietors Guillaume and Tomoko in 2018.  It comes from a very cool site in Ladoix, just down from a premier cru vineyard for white wine.  Picked at 12.5% potential alcohol, the wine was fermented as whole bunches and aged in used casks.  The earthy, mineral cast to the cranberry fruit is surprisingly fresh.  The grapes are right on the limestone sub-soil here, and the effect is very reminiscent of the Côte de Nuits.  Firm tannins and good length: ‘Une belle energie’ according to Tomoko.
