With its beautiful sweet cherry fruit and floral notes, the Favières is perhaps my favourite in the line-up, a view shared by owner Cyril Audoin. The texture is light and crisp but not insubstantial. An exquisite wine with enough structure to ensure that this should continue to improve over the next decade in the cellar. The grapes are from a hectare of vines partly replanted in 2009, and the wine aged a year in barrel (20% new) and a further six months in tank before being bottled unfined and unfiltered.
