The ripe mulberry fruit has a slight menthol edge, with hints of leather and smoke, while on the palate the style is a bit tighter, more closed, and a bit more tannic. Impressive. Bichot has one-third of a hectare here in the prime, iron-rich soils of Rugiens-Bas. They picked on the 26th August to produce this classic Pommard. The fermentation was done with one-third whole clusters and the wine was aged in cask (50% new).
