From the wine list at l’Hostellerie des Clos in Chablis, a 1971 Louis Rémy Chambertin showed delicate, perfumed cranberry fruit with nuances of truffle and earth. More aromas blossom forth as the wine unfolds, including liquorice spice and an undertone of ground coffee and chocolate. The texture is soft and velvety, with completely resolved tannins but a luminously warm feel and a solid finish. Definitely mature, but still showing well.
