Unfined and unfiltered, indeed with no sulphur added, this minimally made Passetoutgrains is delicious. It offers a nose of dark cherry, muddled fruit with a pleasing herbaceous note – almost liquorice-like. There’s lovely density on the palate and plenty of freshness, the whole thing lush and juicy, with an earthy minerality grounding the whole thing. Lovely.
