Over the years, the Volnay Caillerets has consistently been among my favourite reds from Boillot. The 2021 vintage has ripe black plum fruit aromas with smoke, spice, and leather notes. The dense, rich texture surprises given the year, driving the wine to a pleasantly lingering finish. The grapes come from a 0.60-hectare parcel of old vines. The fruit is fermented and aged in small barrels (fermentation intégrale), but this substantial wine is not overwhelmed by the oak.
