This sparkling wine from Michel Laroche in Chablis has been an amazing discovery this year that I strongly recommend getting to know. The name represents the 821 days, or 27 months, from the beginning of the growing season until the moment this bottle leaves their cellars. Drunk on a boat with friends in the summer in one of the those between-lockdown moments of joy, and cracked open again for decorating the Christmas tree, this is a brilliantly crisp yet round wine with layers of cleanly sliced citrus and hints of biscuit.
