The Corton Perrières from Parcellaires de Saulx is a kinder, gentler version of Corton. There is substance and structure, but also an expressive plummy fruit with hints of spice. Notably absent are the astringent tannins one can find in the Perrières climat. The wine is aged exclusively in used casks to preserve the purity of the fruit; it should open in three to five years and will easily drink over the next 20.
