The Volnay Mitans from the new micro-négociant Les Parcellaires de Saulx has showy aromas that reflect the maturation in 30% new casks. Behind the oak, however, lurks a pleasantly ripe blackberry fruit with floral and earth notes. The texture is fairly firm for the appellation, with grippy tannins and a slightly astringent edge. This should open up nicely with a few years in bottle, however, and would be perfect for mid-term ageing.
