Refreshing pear and mint aromas, spice and a smoky, reductive edge. The texture is lively and fresh but not lacking depth. Produced by micro-négociant Nicolas Morin who purchases the grapes from a vineyard in the hills at 400m above the city of Dijon. The grapes are gently pressed and fermented in cask (none new), before ageing nine months. Delightful and perfect for current consumption. Morin also produces a pet-nat from the same source.
