A light yellow colour with a fragranced nose of white flowers, light spices, vanilla, peach and citrus fruits.  This is elegant and finessed with an instant burst of juicy, succulent citrus fruits - lemon, lime and crisp green apple. It has wonderfully balanced acidity, followed by creamy tones with vanilla pod and soft baking spices and some bitter, lemon zest notes on the long finish that give an overall lift. There's lots going on here - so much complexity while still being easy to drink. Castelnau ambassador Fabrice Sommier says it’s ‘important not to serve too cold’ around 12-14 degrees to maintain the aromatic and flavour complexity. He says it’s more ‘like a grand cru with small bubbles’.  Would pair well with fish and creamy dishes. This is the third release of Champagne Castelnau’s special Hors Catégorie cuvées which are limited-edition bottlings made using reserve wines from remarkable vintages and grapes from the most sought-after Crus in the region. This is a blend of 55% Pinot Noir, 30% Pinot Meunier and 15% Chardonnay and is a combination of reserve wines from 2008, 2010, 2011 and 2012. Grapes were sourced from Trépail, Ludes, Mailly, Vitryat, Riceys and Montagne de Reims Ouest.  The wines were aged 90% in barrique and spent seven years on their lees. 5,100 bottles made, 400 magnums. This was bottled on the 18th June 2013, disgorged in July 2019. Hors Categorie means 'beyond classification', the name given to the most challenging mountain passes climbed in the Tour de France. Each cuvée of the wine gives a nod to the height of the highest col or pass ridden in the Tour on the year the wine was bottled. This particular bottle is named after the fearsome Col de la Madeleine at an altitude of 1,993m.
