Toasty white fruits – pear, green apple and lime – form the initial impression. Cleansing acidity sets the tone, with a mineral palate of salted lemon and white pepper. Spicy, with toasty depth and a hint of red apple peel, leading to moreish nuttiness on the finish. This is the flagship bottling of the Reims-based Champagne house, founded by 30 growers in 1964 and now working with over 1,800 across the region. The Mosaïque NV contains 25% to 30% reserve wines and is aged for at least three years on lees.
