Paul-Bastien Clergeot is an imaginative, resourceful vigneron tending this relatively new organic project in Polisot, just south of Bar-sur-Seine. Coming from a plot of Pinot Noir down near the river from the tight 2021 vintage, this is a subtle and engaging blanc de blancs. It shows Mirabelle plums, pale honey, mandarin and gentle fennel-like herbal touches. It's tart and narrowing, yet not austere. This is certainly an estate to watch as the slightly more giving 2022 and 2023 vintages emerge.
