Still, white Coteaux Champenois made from Chardonnay can sometimes be rather austere and oak-defined, but this Pinot Blanc sourced from 80-year-old vines in the grape's Champenois home in Celles-sur-Ource is a different beast. Vinified in stainless steel barrels, there's no actual oak here, which puts the focus on the yellow plum skin, honeysuckle and white peach flavours, backed up by light bread crust notes from lees ageing. It's dry, supple, refined and beguiling stuff from arguably the region's top specialist in the grape.
