La Grande Recolte 2012 from Champagne Pierre Paillard is both substantial and understated, with discreet aromas of ripe pear and apricot, a bit of oak spice, and solid biscuity autolysis. The texture is vinous and powerful but never heavy. The grapes are half Pinot Noir, half Chardonnay from the oldest vines of the domaine. The finished wine was aged for a decade on the lees and bottled with a dosage of just 1 g/L. This wine is drinking well now, but will continue to improve in the cellar for decades to come.
