Olivier Collin took over in 2003 the family entreprise located in the village of Congy, which lies southwest of the Côte des Blancs at mid-point going towards the Côte de Sézanne sector. This is 100% Chardonnay from a single vintage (2014), but is not officially a vintage Champagne. Aged 48 months sur lattes, so with bottles stacked on their sides. A pronounced, even generous bouquet of spring flowers, fresh fruit, but also candied lemon gushes from the glass with a top-note of minty freshness. On the lively palate, there is racy acidity and a tightly knit, lacy texture. Its clear-cut, linear style prolongs the overall crystalline sensation all the way to a long, airy finish. Dosage: 2.8g/L.
