Vincent Couche is one of Champagne's original natural and biodynamic pioneers, still making characterful and sometimes leftfield cuvées not only from the Barséquanais but now over the border in Burgundy, too. The wines are far from strait-laced or squeaky-clean, but this 2020-based entry-level blend, made without sulphites, is full of freewheeling appeal in its dried pear, walnut and tangy strawberry fruit, oxidative and quite developed in style but still narrow and juicy at heart. A good way to get to grips with the wild side of the Côte des Bar.
