A surprisingly rich array of aromas, spanning honey, grilled nuts, candied peel and dried mango. There's some real intrigue and complexity here from a bit of bottle age, it's great to see how whites from this salty corner of Languedoc can age. The palate leans more into savoury herbal notes – struck flint, wild fennel, crushed stones, laurel leave and iodine. There’s lots of presence and weight in the mouth, yet it has this steely savoury core and almost a grippy, phenolic texture. Such a great wine for food, like grilled fish and grilled Mediterranean vegetables, chickpeas marinated in warm spices and fresh sheep’s cheese with olive oil.
