This bursts with pure, vibrant fruit: think ripe black cherries with crunchy skins, tangy redcurrants, as well as aniseed and dried thyme. Made with semi-carbonic maceration, with some whole bunches and stem usage. Light on its feet but full of flavour, it could take a light chill or be enjoyed alongside stuffed red peppers, ratatouille, or creamy bean dishes. Joyful, delicious and seriously moreish, with a fluid and flowing texture. Love this.
