This delivers an almost shocking smack of terroir, though the Roussillon tradition means that its co-planted 70-year-old Grenache Gris, Grenache Blanc and Macabeu can be accommodated in appellation regulations. These are undemonstrative varieties, and the perfumes of this wine are understated but compelling: a wash of lime blossom and green citrus draws you into the glass. It has almost shocking, tongue-sweating acidity which seems to form a paste with the ground stone which the wine also manages to suggest. An elemental white.
