Yet another fine and fascinating white which the varietal constraints of its appellation (St Chinian in this case) forces into IGP status. This is a blend of old-vine Terret, picked at full ripeness, and Grenache Gris picked at early ripeness - a little résumé, in other words, of Languedoc’s deepest white wine history. It’s sappy and fresh in scent, with astonishingly saline, stony flavours. It’s hard not to think of mineral rather than fruit analogies here.
