Cork

Bold and spicy, this is a Fitou with grace as well as heft. Little threads of liquorice, vanilla and warming spices weave through the ripe red fruit, with some smoky, flinty notes in the background. Good acidity keeps things fresh and the tannins are locked and loaded, ready to fire, plentiful and ripe. Fermented with indigenous yeasts. Matured for nine months, two thirds in concrete tank and one third in oak foudres. From the coastal part of the appellation.
