A savoury edge stands out on the nose, cherry laced truffles and mushrooms, that is really appealing. The palate is so lively and fresh, touching on sour but in all the right ways. Tannins are supple and fine with a nice firmness and drive to the long finish. Umami notes continue on the palate too alongside the fruit which makes this stand out and shows the different styles available from Larzac. Made from a plot selection of Syrah and Mourvèdre. This cuvée benefits from 12 months aging in barrels. In the second year of organic conversion. Available for around 25 euros.
