Paul Mas, Astélia Grande Réserve Brut, Crémant de Limoux

A portion of the base wine was fermented in barrel, with the rest in stainless steel, lending a touch of wood and cream to the picture. This is still all about the crisp apple character though, which is lifted, light and fresh. There is a slight floral note on the finish.
