Both floral and stone fruit notes define the nose, with a subtle hint of quince. A precise, taut wine that has made good use of its zesty acidity giving balance and freshness to the finish. It has good potential to develop in bottle and age well. The vines are planted on clay limestone with the grapes harvested by machine and then vinified in clay amphorae, with malolactic fermentation completed. It’s then matured in amphorae for six months. Domaine des Aubuisières was founded in 1978 by Bernard Fouquet. He soon established the domaine as one the leading producers in Vouvray. In 2021 Bernard sold to Charles Lesaffre, although he and Monique, his wife, are still involved.
