Youthful red fruit aromas billow from the glass. The palate is softly textured with some structure, and the tannins need time, or food, to soften. It has good length but is naturally still very young, so best left another six months to a year in bottle. Vines come from a single parcel of clay-limestone, and the average age of the vines is 48 years old. It’s a blend of 80% Gamay and 20% Pinot Noir. The grapes are hand harvested and fermented and matured in stainless steel for six months. This cuvée is called Chicago to commemorate that it was American rootstock that saved the vines here when phylloxera hit this region in the 1880s. The rootstock was shipped out through Chicago. The domaine was certified organic in 2022.
