In the busy village of Bué, this domaine is run by Joël and Sylvie Cirotte and their son Fabien, and is certified Terra Vitis (for sustainable winegrowing). It has 10.8ha – 65% Sauvignon Blanc with an average age of 35 years – with vines in neighbouring Crézancy and Sancerre as well as Bué. Grapes for the Caillottes cuvée are picked by hand, with fermentation taking place in both stainless steel (70%) and 500-litre acacia barrels (30%), then bottling in the summer following the vintage. Jim Budd: Ripe stone fruit on nose and palate, mouthfilling, attractive texture with good length. Impressive wine to drink now or keep. Well balanced despite relatively high alcohol. Natalie Earl: A sultry interplay of flinty, slatey characters with confit lemon, honeysuckle and pineapple. A nice sense of fruit sweetness on the tip of the tongue, with long drawn-out acidity and crispy freshness. Ben Llewelyn:Heady aromatics of ripe peach and herbs, broad on the palate, a good finish. Robust.
