A rich golden colour precedes a plush set of aromas, which include apricot, mango and orange. Seductive, textured, with good concentration and some balancing acidity, which is probably partly masked by the rich fruit. This Chaume has a big potential to age. The Chaume premier cru is immediately above Quarts de Chaume, a little flatter and less sheltered, with more wind. The vines are planted on sandstone, schist and quartz over a carboniferous subsoil. Grapes are selectively harvested by hand with only botrytised or sun-dried grapes chosen during three or four passes through the vines. They are fermented in stainless steel using native yeasts and matured for a year. The 50-hectare Domaine des Forges was founded in 1890 and is now run by Stéphane and Séverine Branchereau, who have considerably enhanced the domaine’s reputation.
