Gingerbread and spice on the nose, and some confit pear. Broad on the palate, rich and all encompassing; the oak is present and it really makes the wine, providing length, texture and complexity; it's very well judged. Touch of lemon rind too on the nose, and a tangy acidity, a little buzz of limestone freshness that holds it all together. Rich, delicious, deep and resonant. Hand-picked, destemmed, 30% vinified in tank at 18°C, 40% vinified in new and old barrels for 10 months on lees without sulphites, with regular stirring, and 30% vinified in big old vats and concrete eggs, with natural yeast.
