Initially processed like the rosé. Hand harvested, grapes chilled in a cold room and pressed next day. Fermentation and ageing however is in large, used, barrels with battonage and the oak is barely evident. The wine shows beautiful La Londe, coastal typicity with intense austere salinity, reminding me in some ways of tight Chablis. The fresh citrus acidity is amazing at 6g/l TA. While the wine is not fruit forward, its Mediterranean ripeness shows in its rich, honeyed fruit, creamy nuttiness and weight. But it is its saline minerality, sour citrus bite and long linear austerity which points to it being a wine with superb ageing potential.
