Sourced from two separate terroirs in Hermitage (L'Hermite and Le Méal) on granite and fluvio-glacial alluvial soils, Epsilon is Cave de Tain's flagship Hermitage, with the first vintage produced in 2004. Epsilon is only produced in good years, with a limited production of 1,000 to 1,500 bottles each vintage. After a slow and long fermentation, the wine is aged for 18 months in new oak barrels.

Christian Honorez: Meaty and intense nose. Roasted meat juice with lots of dry herbs on the palate and powerful tannic structure. Muscular finish too.
Tanguy Martin: Nose of sweet spices and notes of coconut. Soft, with gentle texture but ripe tannins. Fruits are present but melted with the sweet spice notes.
Matt Walls: More developed than some of its peers, with some autumnal fruits and leaf mulch on the nose. Very full-bodied, very smoky and rich. Thick with ripe fruit and ripe tannins, with a distinct smoky cigar lick on the finish. Very long and complex, and will be exceptional. Just a little drying on the hugely tannic finish.
