This blend of roughly a third each Syrah, Grenache and Cinsault isn't really dark in colour, but certainly darker than the nearly transparent rosés ubiquitous in Provence, south of Ventoux. From limestone soils, the grapes for this are hand harvested and fermented at low temperatures in fibreglass tanks (the Grenache and Cinsault, but not the Syrah. see skin contact). Red berry scented, it's bone dry and firm with a subtle salinity. A gastronomic style.
