Strong volatile acidity element on the nose, giving notes of raspberry vinegar, fine balsamic, thyme and furniture polish. Full-bodied, with huge intensity of flavour and incisive, rapier-like acidity. Powerful, driving saline finish. Highly complex natural wine, with driving freshness despite the eight years of age (most of which was spent in barrel – bottled in May 2023). A wine that's hard to score, as it's way out of typical Ventoux, and reactions will be strong: some will love it, other will really not. But it's undoubtedly long, complex, intense and full of personality. No fining, no filtration. From vineyards situated between 400m and 500m above sea level.
