The Ravoire family has deep roots. Originally from Savoie, they settled in the southern Rhône in 1471. Winemaking has been in their blood for many years, but their négociant firm is more recent, established in 1987 by Roger Ravoire and now controlled by his son Olivier. Their white Vacqueyras Pavois is a blend of 50% Roussanne, 25% Clairette and 25% Viognier, grown on clay limestone, all handpicked then fermented and aged in stainless steel to preserve its freshness. Matt Walls: Sweet pear and sugared almond. Full-bodied, rich and concentrated – verging on opulent – but not at all heavy. A long finish. Heather Dougherty: Attractive lemony freshness. Palate has great depth, with stone fruit and lots of dried herbs. A touch of bitterness and salinity make it supremely food-friendly. Alexandre Freguin: An elevated herbal quality. Fresh Mediterranean flowers and herbs. A concentrated palate and a lively finish. Has great overall balance.
