Opens on apricot, yellow plum and mandarin peel, with stem ginger, stony minerals and Mediterranean herbs. With air, spiced apple deepens into toffee apple, caramel and apple crumble, becoming more oxidative and lush. The palate is vibrant, driven by piercing acidity, with stone fruit at the core and a thread of very light, white tea-like phenolics through the mid-palate that give structure. Waxy and textural, yet taut. Minerality is light but slatey, while an umami, gently saline character builds and carries the stone fruit through the finish. Made from Petit Manseng and vinified in stoneware.
