Brothers Steffen and Andreas Rings take risks and come out on top when it comes to wine and sparkling wine. The Calcaire is reminiscent of an artisanal Champagne: the medley of aromas begins with herbal notes, moving through apple, apple peel, apple cider and green tea to toast, roasted nuts and dark bread crust. There’s plenty going on on the palate, too: a lively mousse, taut, rebellious acidity and a very slender body. Challenging, certainly, but also with a touching sincerity.
